Vidula’s Veggie Waffles

Ingredients:

  • Cabbage or any mix of vegetables – (shredded or finely chopped)- 4 cups

  • Onion (finely chopped)- 1 cup

  • Plain Yogurt (can use old)- 1½ cup

  • Oats (Instant Plain) – 2½ cup

  • Chickpea flour- ½ cup

  • Salt & Seasonings: according to your choice and taste

  • Oil or Butter for greasing

Recipe:

  • In a big bowl mix all the vegetables, yogurt, salt, seasonings and give it a good rub

  • Mix in the chickpea flour evenly

  • Add the oats to the bowl and mix thoroughly

  • Let it sit for a couple of minutes

  • Grease the waffle iron and heat it up

  • Put scoops of the mix and cook till it turns brown and

  • crisp-say about 3 to 5 minutes
